Pizza with Caramelized Onions, Gorgonzola, & Avocado
Love this pizza. Amazing combination of flavors, great slightly sweet and crunchy dough and fresh creamy avocado. A great dish for snaking, Sunday brunches for two or friends evening, choose by yourself but you just ought to make this pizza.

Ingredients
- 1 cup warm water
- 1 tbsp dry yeast
- 2.5 cups flour
- 1 tsp salt
- 4 tbsp olive oil
Method
To make the dough, mix water, honey, and yeast in a bowl. Leave it for 5 minutes so that the yeast starts to work. Add flour, salt, and oil. Work the dough well together. Cover with plastic and let it rise for 1 hour. On a baking tray press the dough out with your fingers to form a large pizza.

Filling
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp water
- 3 oz gorgonzola, crumbled
- 2 tbsp olive oil
- 1 avocado, peeled and cubed
- fresh parsley
- salt &pepper to taste
Preheat the oven to 400 F. Place onion, oil, and water in a pan and saute until onions turns light brown and is soft.
Divide it over the pizza together with gorgonzola. Drizzle with olive oil. Bake until golden, about 12 minutes. Take it out and add avocado, parsley and salt and pepper.
